Please use only stainless steel 316, trust me i work in a machine shop we do a lot of work for ships.
Kyle, the bigger #16 bung will INCREASE the pressure. Bigger hole means increase in pressure and lower velocity. Opposite is true for smaller holes.

Cant wait to see the maiden voyage! As a suggestion, try and use anti-seize on any stainless hardware that is going into the aluminum. Not as big a deal in fresh water, but salt water/moisture causes a reaction between the metals that can destroy the aluminum (I work in the marine industry and have come across this many times)

I know jack shit about boats or jet skis 😬. What I keep coming back to is how are you going to disengage the engine from the jet pump when you stop or will it not be spinning fast enough to propel the boat ?
