You can put insulation with washer and a rivet to hold it in place. You could have a five-sided fire resistant sound installation. They do sell it. I would consider a couple of holes where you can point a fire extinguisher into the hole to saturate any possibility of the fire?. Sort of like a Halon system but a powder. One extinguisher per engine. That way you don't run out.
You don't have to print for the corners. You can just go to home Depot, child safety area and get preformed corners and other parts.
Loving the build so far, I think you need to sort some locking mechanism out for the swim deck to stop it floating out once it's on the water and I also agree the engine boxes need vents or you will over heat them maybe put a fan in to blow air out.

Still just outboard engines with boxes over them. Inboard/outboard engines have a engine inside the hull, with a lower unit attached on the outside of the hull

Are you going to add vents on the boxes to enable airflow through the boxes
Something that would make both the motor cover, and the swimming deck easier and faster to move in place would be a lever or sequence of them.
Change hot tub or end series
I think you would benefit from a blower and vents in your engine covers for safety to exhaust the combustible fumes.
