We’re cutting up a pig we slaughtered on the farm, but not in the typical way. I’m trying a unique cut that combines the pork belly, spare ribs, and baby back ribs, with the goal of making a cut that is delicious smoked.

  1. I tried finding pig fat to add to my ground venison the past couple years, but nobody would sell it for less than $3 a pound! That’s more than grocery store sausage, so I passed. I would love to pay for fat and render my own lard.

  2. I render lard and it makes the best pie crusts. I do it inside and my house does not smell any more than when I make a pork roast in the oven. I wish that I could buy all the fat from you.
