You have a lathe, you could have cut a ring spacer to fit inside the sprocket and the outside of the hub. That would have done most of the lineup. Them tack it, adjust and the weld the heck out of it. I like Gary's suggestion of welding it up then cutting it down to fit on the lathe. Then maybe you did since I'm not to the end of the video yet. Wish I had a lathe.
Back in the day when we use the gear puller. We will get it tight and then we hit it with a hammer and It would Knock off the gear or whatever you were removing. It work but 90% of the time

Water or oil feed the cutter to prevent heat buildup.

Eventually you could make up a few t-shirts and caps with your logo and sell some, have giveaways and watch how much you grow in no time at all. You dont need some tv network to run your show. We like how you have it now. Keep up the great work and if you need someone to design a logo for you my son is graphic designer and works for a large printing company. He is very good and he will give you a great deal. (He better or I'm kicking him out if the will)

I'm half way through the vid. I know it's a year old but since you are messing around with the lathe, is there a reason you didn't cut a second step on the collar to seat the sprocket?

Why not machine the collar?
Re: the sprocket, I thought about heating the sprocket and placing a piece of steel plate over it and putting it in your press…it might flatten it straight again. Wouldn't hurt to try. Of course I drink when I watch your videos…so who knows.
So when a woodruff key is not used but you need one, assemble the pulley onto the shaft and drill between the two. Then tap the hole to use a high grade bolt as the key. I’m sure someone here knows it and can explain it better and with more eloquence than I.

If you wanna transfer bolt holes/holes/screw positions accurately from one surface to another a good way is to drop some ballbearings in the holes put the connectable plate/sprocket/ply/hardwood on top and hit it with a hammer job dun JB
Could have just put 2 beads of weld on the coupler then use the lathe to get the correct hub size. Would have been soo much quicker
