Pete, that beef roast with great yellow fat, was what I was always had, but coming to USA, all the beef had WHITE FAT, so thaught it was just a DIFFERENT TYPE OF COW, only after seen a GREAT BUTCHER IN. NEW PALTZ NY, did I see yellow fat and it was explained, my supermarket in NJ used to sell ANGUS BEEF & grass fed AUSTRALIAN, OR NEW ZELAND BEEF for NOT MUCH MOREM,BUT THEN MY LATE WIFE WANTED TO KNOW WHY THE FAT WAS YELLOW, so I has to explain it to her, THEN REALISED HOW MUCH BETTER IT WAS,
